Spinach Dip with Southwest Tortilla Chips

Ingredients:
16 ounce frozen or fresh Spinach
8 ounce cream cheese, softened
1 tbsp. garlic powder
1 tsp salt
½ cup parmesan cheese, shredded
1 cup sour cream
Directions:
In a large mixing bowl, add hot water and spinach. Allow spinach to blanch for 10 minutes. Remove and drain water from spinach. Place spinach in refrigerator for 30 minutes. Remove cream cheese and let sit to soften. In a food processor, add cream cheese, garlic, salt and sour cream. Allow to mix by pulsing until ingredients are blended well. Then add spinach and parmesan cheese to the mixture and pulse until gently combined. Cover and refrigerate until ready to serve.
Serve with Pita bread, chips or crackers
