
Ingredients:
1.5 pounds lean ground chuck
29oz can tomato sauce
½ can water
1 cup frozen peas
1 can cut green beans
1 can corn
2 fresh carrots diced thin into circles
2 cups frozen black eye peas
1-16 oz carton of beef broth
2 tsp garlic
1/2 tsp salt
½ tsp nutmeg
½ tsp black pepper
Optional: ½ cup diced onion if desired
Directions:
In a large sauté pan, brown ground chuck. In a large pot, begin adding tomato sauce, beef broth and seasonings. Bring to a boil. Once boiling add all other ingredients except ground chuck. Turn soup onto a simmer. Once the ground chuck is browned, drain any fat and place into soup mixture. Continue to let soup simmer until all vegetables are soft stirring occasionally. This process can take 30-45 minutes.
