Lima Beans

Ingredients:
1 – Frozen Package of baby Lima beans
2 tsp salt
1 tsp black pepper
2 Tbsp. Golden Balsamic Vinegar
4 bacon slices
1 – Carton of Chicken Stock

Directions:
Cut bacon into ¼ pieces. In a large pot, place the bacon and cook. Add chicken stock to the pot. Scrape the bottom of the pot to remove any bacon pieces. Add Lima beans, Vinegar, salt and pepper. Allow to come to a boil. Allow the Lima beans boil for about 5 minutes. Reduce heat to a simmer and cover the pot. Stir occasionally. Continue to cook for about 20-30 minutes or until Lima Beans are soft and most of the liquid has evaporated. (Note: if the liquid evaporates before beans are cooked, just add water as needed)
Serve.
