
Ingredients:
Muffin Pan- 12 count
Non-stick cooking spray
2 sweet potatoes
1/3 cup brown sugar
¼ cup unsalted butter
½ cup pecans
½ cup mini marshmallows
Directions:
Step One:
Preheat oven to 375*F. Spray the bottom of each muffin tin with a non-stick spray.
Step Two:
Peel and wash sweet potatoes. Cut potato into ¼” inch round slices. Cut each round slice into halves.
Step Three:
Place four half slices on the bottom of each muffin tin at 90 degree angles.
Step Four:
Place ¼ tsp of brown sugar on top of each prepared tin.
Step Five:
Repeat Step Three.
Step Six:
Add Butter on top. Use same amount for each tin by dividing the ¼ cup.
Place pecans and marshmallows evenly on top.
Cover with Aluminum Foil and place in the oven for 30 minutes. Remove Foil and place back in the oven for 5-10 more minutes.
Serve.
