Ingredients:
8 medium to large red potatoes
1 small red bell pepper
¼ cup Green onion
3 Tbsp. mayonnaise
1 ½ Tbsp. sour cream
2 tsp spicy mustard
1 tsp salt
½ tsp black pepper
¼ tsp ground mustard
Directions:
Wash and peel potatoes. Cut into ¼”-1/2” cubes. In a medium sauce pan, fill ¾ way with water and let come to a boil. Add potatoes. While potatoes are cooking, finely dice red pepper and remove seeds. Finely chop green onions. In a large mixing bowl, add the remainder of the ingredients and stir. Let the potatoes boil 15-20 minutes until tender. Remove from water and strain. Add the potatoes and red pepper to the bowl with all the ingredients, reserving the green onion. Mix gently until incorporated. Add the green onions and fold with a spoon three times into the mixtures. Cover with plastic wrap and place in the refrigerator to cool for at least 1-2 hours prior to serving.
