Ingredients:
2 cups cooked white rice
2 green onions diced both white and green parts
1 can of yellow corn, drained of juices
½ cup chicken broth
1 tbsp. butter
Salt and pepper to taste
Directions:
In a medium sauce pan heat to high. Add butter and allow to melt. Add green onion and cook for about 1 minute then reduce heat to medium. Add corn, chicken broth, salt and pepper to taste. Continue to cook for about 5 minutes. Reduce heat to low and add rice. Continue to cook another 5 minutes or so until broth has incorporated into the rice. Stir occasionally. Serve.
