Rice with Pineapple

Ingredients:
2 cups long grain white rice, uncooked
3 cups chicken broth
1 cup pineapple juice
1 cup crushed pineapple
1 small red pepper, diced
1 small green bell pepper, diced
2 strips of bacon, uncooked
½ tsp salt
½ tsp garlic powder
½ tsp onion powder
1 tsp turmeric powder

Directions:
Heat a large pot to medium. Cut bacon strips with kitchen scissors into small pieces. Cook for about 2 minutes constantly moving the bacon around the pan. Add chicken broth and pineapple juice. Scrape any bits of bacon from the bottom of the pan.

Turn the heat to high and allow the broth to come to a boil. Reduce heat back to simmer and add rice, salt and all seasonings. Stir well to incorporate all the ingredients. Cover with a lid. Continue to cook for twenty minutes or until all broth has absorbed into the rice.

Remove pan from heat and set aside.

Heat a large sauté pan to medium high heat. Add crushed pineapple, diced green and red peppers. Cook for 3-4 minutes to soften the peppers. Add cooked rice to the large sauté pan and continue to cook for another 2 minutes while stirring to incorporate all of the ingredients well.

Serve as a side dish.

This rice recipe pairs well with Pork and Chicken dishes.
