Ingredients:
8-10 large Golden or Idaho potatoes
1 cup milk
2 sticks Butter unsalted
2 tsp salt
½ tsp black pepper
Directions:
In a Large Pot add water to cover potatoes. Heat water to boiling. Clean, Peel and slice potatoes into 1 inch cubes.
Place cut potatoes into boiling water. Cook until potatoes are tender enough that a fork easily breaks them apart. Strain potatoes. Add half the potatoes to the pan – do not place on the stove. Take a fork and mash the potatoes until no lumps, take the other half of the potatoes and do the same. Then add to a stand mixer the potatoes, butter, salt, pepper and ½ of the milk. Slowly beat to mix all ingredients, then add more milk if potatoes are too thick. Continue to let mix on medium to high for about 4 minutes.
