Cabbage

Ingredients:
2 Pounds green cabbage
2-4 pieces of lower sodium bacon
½ cup chicken stock
¼ cup white wine vinegar
2 tbsp. balsamic vinegar
¼ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp ginger
½ tsp red pepper flakes (optional)
2 cups hot water
Directions:
Cut up green cabbage into strips. Chop Bacon into ¼” pieces. In a large skillet, add bacon and cook for about 5-7 minutes on medium- high heat. Bacon will not be crispy.
Add all seasonings, chicken stock, balsamic vinegar and white wine vinegar. Stir for about one minute to incorporate with the bacon and bacon grease.
Reduce heat to medium. Add cabbage and continue to cook for about 8 minutes. Your mixture will incorporate into the cabbage.
Add 2 cups of hot water. Reduce heat to a simmer. Cover skillet with a lid. Cook for about 20 more minutes, stirring occasionally.
Serve.
