
Ingredients:
1 package dried black eye peas
4 tsp salt
2 tsp black pepper
1 16 oz. carton chicken stock
Directions:
Clean black eye peas and check for any bad peas and remove.
Let Black eye peas soak in a large mixing bowl with 2 tsp salt and warm water for 1 hour at room temperature.
In a 1 gallon pot- add 1 gallon of water and let boil.
Once water is boiling add remaining salt and pepper and strained and soaked black eye peas. Cook black eye peas on high until most of the water has cooked out. This should take about 30-60 minutes. Once the water has been cooked down, Add I carton of chicken broth. I prefer to use organic lower sodium, but any chicken stock will do. Lower heat to simmer and cook until broth is almost to a boil. Continue to cook on low stirring as needed until black eye peas are soft. Serve.
