
Ingredients:
3-4 pieces of fish cut in half to make 6-8 pieces for a sandwich
2 tsp Lemon juice
Water
1 tsp salt
Brine:
5 cups water in bowl, 2 tbsp lemon juice, 1 tsp salt
Brine fish in cold lemon water for about 1 hour
Remove from water and let fish sit on a plate for about 20 minutes
Reserve water
Fry mixture:
1 cup white corn meal mix
1½ cup flour
¼ French fried onions finely crushed
1 tsp garlic powder
1 tsp paprika
½ tsp salt
¼ tsp black pepper
Large container of canola oil
Directions:
Mix all ingredients above in a separate bowl. Dip fish into the brine water and dredge in the fry mixture. Place into hot grease so fish is emerged. Let the fish cook for about 4-5 minutes or until done. Remove fish and place on a paper towel to absorb the grease.
Make sandwich with mini hamburger buns, tartar sauce, lettuce and tomato.
