Ingredients:
6 –8 catfish
Lemon juice
Water
Brine:
5 cups water in bowl, 2 tbsp. lemon juice
Brine fish in cold lemon water for about 1 hour
Remove from water and let fish sit on a plate for about 20 minutes
Reserve water
Fry mixture:
2 cups white corn meal mix
½ tsp cayenne pepper
½ tsp garlic powder
½ tsp garlic powder
½ tsp paprika
½ tsp salt
½ tsp black pepper
Large container of canola oil
Directions:
If fresh caught, clean fish and filet off the bone into strips. Mix all ingredients above in a separate bowl. Dip fish into the brine water and dredge in the fry mixture. Place into hot grease so fish is submerged. Let the fish cook for about 4-5 minutes or until done. Remove fish and place on a paper towel to absorb the grease. When fish are cooked, they will be golden brown and float to the top of the oil.
