Potato Salad

Ingredients:
8-10 large Red Potatoes or 6-8 Golden potatoes
2 tsp mustard
½ tsp salt
½ tsp pepper
½ tsp garlic salt
1/3 cup green onion sliced thin only green parts
1/3 cup mayo
1/3 cup sour cream
1/4 cup shredded cheddar cheese (optional)
5 bacon strips cooked and crumbled (optional)
Directions:
Wash and cut potatoes in 1/4 inch cubes. In a large sauce pan, heat water bringing to a boil.
Once water is boiling, add potatoes and cook until tender and easily able to fork. Do not overcook. Once potatoes are cooked, drain water using a strainer. Place hot potatoes in a large mixing bowl and add salt and pepper and mix. In a separate bowl prepare mustard, mayonnaise, sour cream, onion, garlic salt and cheese and bacon. Mix together well. Then add potatoes to the mixture and stir gently until all potatoes are coated. Place potato salad covered in the refrigerator until ready to serve. ( one hour of cooling time and no longer than 2 days in the refrigerator)
