Kale Salad

 

Ingredients:
4 cups Kale- washed and chopped
2 cups shredded sweet potatoes
2 cups shredded red cabbage
½ cup walnuts
¾ cup Balsamic Vinaigrette
8 ounces block of Monterey Jack Cheese
¼ tsp salt
½ tsp granulated sugar
Directions:
Rinse Kale and roughly chop. In a bowl, place hot water a ¼ tsp salt and ½ tsp of sugar Place washed and chopped Kale in the bowl of hot water. Allow Kale to sit for about 10 minutes. Strain Kale removing all the water. Cover the bowl tightly with plastic wrap. Place in refrigerator to cool and crisp for about one hour. Cut cheese block into 1 inch cubes. Shred sweet potatoes and red cabbage. Set these aside for later. Remove Kale from refrigerator.  Add the sweet potatoes, red cabbage and vinaigrette. Mix together. Next, top with walnuts and cheese. Serve.
