Kale Salad

Ingredients:
1 package Ramen noodles cooked and chopped finely
4 cups Chopped kale in ¼ inch pieces
2 tbsp. Apple Cider Vinegar
2 Tbsp. EVO
3 tbsp. Sugar
½ tsp salt and pepper
2 tbsp. mayonnaise
1 cup fresh cut broccoli florets
¼ cup finely diced red onion
¼ cup sliced almonds
¼ cup dried cranberries
¼ cup Parmesan Cheese shredded
¼ cup sliced cherry tomatoes
¼ cup bacon cooked and shredded
Directions:
Cook Ramen noodles as per package directions without sauce. Allow to cool and then chop.
Cook Bacon extra crispy. Allow to cool and then chop finely.
In a Separate Bowl mix Vinegar, EVO, Sugar, Salt, Pepper, and Mayonnaise. Set aside.
Prepare all other ingredients as above and mix together with Ramen noodles and Bacon. Next gently stir in the Vinegar mixture. Allow to chill and serve. Serves 8-10
