Bacon Spinach Arugula Salad

Ingredients:
One package of fresh spinach or prepared spinach leaves
One package of fresh arugula or prepared arugula leaves
Purple Cabbage
1 large tomato
8 slices of thin cut bacon
1 cup grated smoked gouda cheese
Directions:
Wash spinach and arugula. Drain well. Place in a bowl and put in refrigerator to crisp (about one hour). Cook bacon crispy, allow to cool and chop into 1” pieces. Slice and then dice purple cabbage raw. Shred cheese. Slice tomato into 1/8 to 1/16 slices and remove seeds. Once lettuce is crisp remove bowl from refrigerator. Toss in purple cabbage. Then layer with tomatoes, chopped bacon and smoked gouda cheese.  Serve with a sweet vinaigrette.
