
Ingredients:
2 pounds of red potatoes (4 large or 8 small)
1 sweet onion
1 red bell pepper
1 green bell pepper
½ tsp salt
1 tsp black pepper
1 tsp paprika
3 tbsp. olive oil
Directions:
Preheat oven to 375*F. Wash vegetables and chop all into 1 inch chunks. Place all chopped vegetables in a large bowl. Add spices and oil. Mix thoroughly and place on an oven sheet pan or a 9*9 glass baking dish. Make sure to place the mixture in a flat layer. Place in the oven and bake for 50-60 minutes.
Serve with dinner or breakfast.
