Ingredients:
2 large baking potatoes skinned and sliced thin
¼ cup petite diced red pepper
¼ cup petite diced green bell pepper
1/2 cup milk
1 cup sour cream
½ cup buttermilk
½ cup shredded parmesan cheese
1/8 cup dried parsley flakes
2 egg whites
¼ tsp salt
½ tsp black pepper
¼ tsp garlic powder
Paprika sprinkle on top
Directions:
Preheat oven to 375 * F. In a mixing bowl, add all ingredients except potatoes and stir well. Place the potatoes in an ungreased glass casserole dish. Pour the mixture over the potatoes. Place in the oven uncovered on the middle rack and cook for 45 minutes to one hour. Remove and serve. Serves 4-6
