Ingredients:
4 large Baking Potatoes
2 cups cheese shredded (Monterey Jack or cheddar)
6 slices of bacon cooked and crumbled
Directions:
Preheat oven 375*F. Wash potatoes thoroughly. Once washed poke small holes on all side of the potato as well as the top and bottom using a fork. . Cook potatoes in microwave for about 10-15 minutes. Cut potatoes in half lengthwise. Scoop the potato out of the skin leaving some potato around the edges and the bottom. Reserve the scooped potato for another dish or discard. Mix together. Add cheese and bacon on top of each potato and place in the oven for about 15-20 minutes. Serve.
Options:
Add chives, sour cream or any other topping to cooked potato skins before serving.
