Vegetarian Lasagna Two

Ingredients:
1 16oz package of uncooked Lasagna noodles
1 48oz jar of your favorite spaghetti sauce or your own homemade sauce
16oz container of sour cream
2 pounds of mozzarella cheese
One tbsp. olive oil
2 cups sautéed mushrooms
1 cup diced onions sautéed
2 cups shredded zucchini
1 cup shredded yellow squash
Directions:
Cook Lasagna noodles as per package directions. Sauté mushrooms and onions with one tbsp. of olive oil. Mix cooked vegetable, uncooked vegetables with sauce in a large bowl. Next take a 9 x 9 x 2 glass pan and place a small amount of sauce to coat the bottom. Next add a layer of lasagna noodles. Then spread sour cream as a thin layer. Add 1/3 sauce mixture to coat this layer. Next sprinkle the layer with 1/3 of the cheese. Repeat 3 times or as your ingredients allow. Once finished layering, add more cheese on top for a thick layer. Place in a 375* F oven and bake for about 40-45 minutes or until all cheese is melted on top.
