Ingredients:
2 cups granulated sugar
1 cup milk
2 tsp vanilla extract
½ cup canola oil
3 egg whites
1 cup hot boiling water
1 tsp espresso powder
2 cups All Purpose Flour
¾ cup cocoa powder
1 ½ tsp baking soda
2 tsp baking powder
24 paper cupcake liners
Optional:
Fondant
Food coloring
Sprinkles
Directions:
Preheat oven to 375*F. Lightly spray 24 baking cups or baking tins. Add sugar and milk to a bowl. Mix well until sugar has dissolved. Add vanilla, egg whites and canola oil. Whisk these ingredients together. To boiling water, add espresso powder. Incorporate this mixture in with other mixed ingredients. Then add the remaining dry ingredients. Fill each baking cup or tin ¾ of the way. Place in oven and bake for 20-25 minutes or until done.
To decorate each cupcake, use any frosting of your choosing. Add sprinkles on top for more decorative color.
If using Fondant, choose color and cut outs. Color the amount of fondant you wish to use by adding gel food coloring. Roll out the fondant and cut into desired shapes. Allow to dry on parchment paper. Then add on top of Halloween Cupcakes.
