Ingredients:
16 ounce package of fresh or frozen strawberries
1 cup Key Lime juice (or lime juice)
3 tbsp. water
2 cups granulated sugar
2 sticks unsalted butter
One dozen eggs
Graham Cracker Crumble:
18 graham crackers whole or 2 sleeves
½ stick unsalted butter melted
Whip Cream:
1 pint heavy whipping cream
¼ cup powdered sugar
Optional: To make this dessert easier, you can use already made single graham cracker pie crusts or already made tart shells. This dessert can use already made whipped cream.
Directions:
Heat a medium sauce pan to a low-medium heat. Add 3 tbsp. of water and strawberries. Allow to cook for about 10-15minutes. Strain strawberries through a small mesh strainer by mashing with a fork to remove all the juices. This should make 1 ½ to 2 cups of juice.
Add the strawberry juice, one cup of lime juice and two cups of sugar to the medium sauce pan. Turn heat to medium and stir constantly until the sugar has melted into the mixture. Then add two stick of butter and allow to slowly melt.
In a large bowl, crack all 12 eggs and mix together well. Once butter is melted, add eggs slowly while whisking in the eggs to the mixture. Allow to cook over a low-medium heat while occasionally whisking the mixture for about 20 minutes or until the mixture has thickened.
**Once strawberry Lime mixture has thickened, strain again through small mesh strainer to remove any thick pieces in the mixture. I often strain this mixture twice to make sure the mixture is smooth and creamy.
**Set aside your curd and make whipped cream and Graham cracker crumble.
Graham Cracker Crumble Directions:
Using a food processor, pulse graham crackers to a fine crumble. Add melted butter and pulse until blended.
**If you do not have a food processor, you can use a gallon sized plastic bag and a rolling pin or meat hammer to crumble. Then add crumbled graham crackers and melted butter to a bowl. Mix with a fork until well blended.
Whipped Cream Directions:
To a standing mixer, add heavy cream and powdered sugar. Start by mixing on low speed. Once ingredients have incorporated turn speed to medium high. Mix until thickened. This process takes approximately 10-15 minutes.
Assemble:
Place your graham cracker crumble on the bottom of individual size cup. Add 5 tablespoons of strawberry lime curd. Top with 2 tablespoons of whipped cream. Sprinkle the remaining graham cracker crumble on top to garnish. Place in the refrigerator to chill for about two hours.
This recipe makes 8-10 single serve desserts.
