Ingredients:
2 cups dried Oats
½ cup dried cranberries
1 cup pecan halves
1 cup white chocolate morsels
1 ½ cup All Purpose Flour
1 tsp baking powder
½ tsp salt
2 sticks unsalted butter, softened
1 large egg
1 cup dark brown sugar
½ cup granulated sugar
1 tsp vanilla extract
Directions:
Preheat oven to 350*F
In a mixing bowl, add flour, baking powder and salt. Set aside. In a standing mixer add softened butter, brown sugar and granulated sugar. Blend until creamy. Add egg and vanilla. Mix until blended well. Add ½ of the dry mixture and mix until blended. Add the remaining dry mixture and mix until blended.
Remove the mixture and place in a large bowl. Add the oats and white chocolate. Mix with a spoon until combined. Then add cranberries and pecans. Mix this until well combined.
Scoop out the mixture into one inch balls. Place on an ungreased cookie sheet. Press each formed cookie ball slightly to make a more rounded cookie. Place in the oven for 14-16 minutes. Once the cookies are slightly brown on the bottom, remove and let cool.
