Maple Bacon Cookies

Ingredients:
3 cups plain uncooked oats
2 cups cup All Purpose Flour
2 sticks unsalted butter, softened
¾ cup dark brown sugar
1 egg
½ tsp Salt
1 tsp baking powder
½ cup maple syrup
8-10 slices low sodium bacon, cooked and cut
Optional: ½ cup fresh blueberries

Directions:
Preheat oven to 375*F. In a large bowl, add flour, baking powder and salt. Set aside. In a standing mixer, add butter and sugar and beat until fluffy. Add egg and maple syrup. Beat until mixed. Add dry ingredients slowly to the mixture and mix together on low. Add oats and bacon to the mixture and fold in the ingredients with a spoon. Then add blueberries and gently fold into the mixture. Scoop the cookie mixture into one inch round balls. Place on a lightly greased cookie sheet at least 1” apart. Bake in the oven for about 14-16 minutes. Remove from oven when bottom of the cookie are lightly browned.
