Ingredients:
2 sticks unsalted butter – softened
2 cups All Purpose flour
2 tbsp. Lemon extract
¾ tsp salt
½ cup of confectioners’ sugar
Directions:
In a standing mixer, mix butter and sugar until blended. Add Lemon extract and mix. In a separate bowl, mix flour and salt. Add the flour mixture to standing mixer one cup at a time and blend well. Refrigerate dough for one hour. Remove dough and roll and cut into desired shapes. Preheat oven to 325*F. Place the rolled cookies on a slightly greased cookie sheet. Place in the oven and bake for 8-10 minutes or until lightly brown on the bottom. Remove from cookie sheet and allow to cool.
