Butterscotch Pretzel Cookies

Ingredients:
2 cups dried Oats
3 cups salted pretzel sticks finely crushed
1 ½ cups Butterscotch morsels
1 ½ cup All Purpose Flour
1 tsp baking powder
2 sticks unsalted butter, softened
1 large egg
1 cup dark brown sugar
Directions:
Preheat oven to 350*F
In a mixing bowl, add flour and baking powder. Set aside. In a standing mixer add softened butter and brown sugar. Blend until creamy. Add egg. Mix until blended well. Add ½ of the dry mixture and mix until blended. Add the remaining dry mixture and mix until blended.

Remove the mixture and place in a large bowl.

Measure 3 cups of pretzels. Then finely crush them using a rolling pin or food processor.

Add the oats, butterscotch morsels and crushed pretzels. Mix with a spoon until combined.

Scoop out the mixture into one inch balls. Place on an ungreased cookie sheet. Press each formed cookie ball slightly to make a more rounded cookie. Place in the oven for 14-16 minutes. Once the cookies are slightly brown on the bottom, remove and let cool.
