Chocolate Graham cracker crust
Ingredients:
3 cups of chocolate graham crackers finely crushed
1½ sticks unsalted butter melted
Directions:
Preheat oven to 350 * F. In a mixing bowl add melted butter to crushed graham crackers. Moisten by stirring with a fork. Place the mixture in the bottom of a spring form pan and gently press the mixture up the sides of the pan. Do not grease pan. Place the pan into the oven on the middle rack and bake for 15 minutes. Remove from oven and allow to cool.
Blueberry Sauce
Ingredients:
1 package of fresh blueberries
½ cup sugar
1 cup water
Directions:
In a small sauce pan add blueberries, sugar and water. Bring to a boil. Once boiling turn heat to med-high and cook for about 10 minutes. Remove from heat.
Lemon Cheesecake
Ingredients:
2 – 8 ounce packages of cream cheese
1 22 ounce can of lemon filling
1 cup sugar
Directions:
In an electric mixing bowl add all ingredients and blend until creamy and fluffy. Start on medium blend for about 2 minutes then on high for about 5-6 minutes.
Once crust has cooled some, add the mixture and spread evenly. Then drizzle blueberry sauce over the top. You will have leftover blueberry sauce. Then place in the freezer to set for about 4 hours.
Serve once set.
