
Ingredients:
25 ounce jarred peaches, drained
1 ½ cups All Purpose Flour, sifted
2 tsp baking powder
¼ tsp salt
2 tbsp. canola oil
3 tbsp. unsalted butter
2 tbsp. brown sugar
1/3 cup shortening
2/3 cups granulated sugar
1 ¼ cups milk
¾ tsp vanilla extract
2 large egg whites
Optional: ½ cup fresh Blueberries
Directions:
Preheat oven to 350*F
Melt butter. Add the melted butter and 2 tbsp. dark brown sugar to the bottom of pie baking dish.
Spread to evenly coat the bottom. Arrange drained peaches on the bottom by layering. If desired, layer to make a flower appearance then add blueberries in the middle.
Cake Mixture:
In a large mixing bowl, add dry sifted ingredients (flour, baking powder, salt). Set aside. In a standing mixer, add granulated sugar, softened shortening, milk, canola oil, vanilla and egg whites. Mix until combined. Add flour mixture and blend well to combine. Pour the combined cake mixture on top of the peaches in pie dish.
Place in the oven and bake for 40 minutes.
Final Step:
After removing from the oven, Take a plate and place on top of the pie dish. Turn the plate so that the plate is on the bottom and the pie dish is on the top. The cake should slide out perfectly onto your dish.
