Raspberry Lemonade Cake

Ingredients:
3 cups white flour
1 ½ cups sugar
1 tsp baking powder
½ tsp salt
3 egg whites
1/3 cup oil
½ cup water
1 package raspberry gelatin
1 ½ tbsp. of Lemonade mix (mixed with ¼ cup water)
1/3 cup water
Directions:
Preheat oven to 350*F. In a stand mixer mix flour sugar salt and baking powder on low speed for about 15 seconds. Then add water, oil and egg whites . Mix until thoroughly blended. Mix Lemonade Mix in with 1/3 cup water and add to cake mix. Stir until blended. Add gelatin mix and stir until blended. Cake mix will be dark pink. Add mix to 2- 9” cake rounds greased and floured or one rectangular cake pan or muffin pan. Bake 35 minutes for 2 round cake pans, 45 minutes for rectangular pan and 25-30 minutes for muffin pan.

This recipe also makes 24 cupcakes or 48 mini cupcakes
