Ingredients:
3 Cups sifted cake flour *
2 Cups granulated sugar
1 stick of unsalted butter
1 tbsp. baking powder
2 tbsp. olive oil*
5 egg whites
1 tsp salt
1 cup of milk *
2 tbsp. lime gelatin powder
2 tbsp. raspberry gelatin powder
Directions:
Prepare 3 – 9*9 cake pans with butter and flour. Preheat oven to 350*F.
Step One: Cream butter and sugar in a standing mixer until fluffy.
Step Two: Sift cake flour, baking powder and salt together in a bowl.
Add 1/3 of flour mixture and 1/3 cup of milk. Mix until blended. Continue this process until all milk and flour have been combined. Note: You may need to scrape the sides of the mixing bowl.
Step Three: Mix egg whites and olive oil in a separate bowl. Add slowly to cake mixture until all has blended thoroughly.
Step Four: Take 1/3 of the cake mixture and place in another bowl. Add 2 tbsp. of Lime gelatin powder and fold in. Then place the batter in one of the cake pans.
Step Five: Take 1/3 of the cake mixture and place in another bowl. Add 2 tbsp. of Raspberry gelatin powder and fold in. Then place the batter in one of the cake pans.
Step Six: Take the remaining 1/3 of the cake mixture and place in third pan.
Place the cakes on the middle rack of preheated oven. Bake for 25 minutes or until center is clean when a toothpick is inserted.
Allow the cakes to cool prior to removing from the pan. Layer cakes beginning with the Lime Cake, white cake and then Raspberry cake.
Cut into squares after layered to make petit fours.
