Chocolate Cake

Ingredients:
2 cups granulated sugar
1 cup milk
2 tsp vanilla extract
½ cup canola oil
3 egg whites
1 cup hot boiling water
1 tsp espresso powder
2 cups All Purpose Flour
¾ cup cocoa powder
1 ½ tsp baking soda
2 tsp baking powder

Directions:
Preheat oven to 375*F. Grease and Flour cake pan(s). Add sugar and milk to a bowl. Mix well until sugar has dissolved. Add vanilla, egg whites and canola oil. Whisk these ingredients together. To boiling water, add espresso powder. Incorporate this mixture in with other mixed ingredients. Then add the remaining dry ingredients. Place mixture into cake pans.

Bake 35 minutes for 2 round cake pans, 45 minutes for rectangular pan and 25-30 minutes for muffin pan. Makes 24 cupcakes or 48 mini cupcakes
