Banana Churros

Ingredients:

24 ounce canola oil
1 cup water
1 ¼ cup All Purpose Flour
1 tbsp. cinnamon
3 tbsp. sugar
1 ripe banana

Chocolate Sauce:

1 bar dark baking chocolate
Double boiler

Directions:
In a shallow pot, add oil to cover ½ the pot. Heat oil to 300*F.
In a mixing bowl, add water, flour, sugar and cinnamon. Mix together. Slice banana and add to the mixture. Mash the banana into the mixture with a fork.

Place mixture in a large sealable plastic bag. Cut ¼” of the corner of the bag. Pipe Churro mixture directly into the hot oil. After 20 seconds, gently remove from the bottom of the pan to allow the churro to float. Once the churro is golden brown, remove and place on paper towel, or cooling rack to drain of excess oil.

In a double boiler, add water and bring to a boil. Reduce the heat to low. Then add chocolate bar and stir occasionally as the chocolate melts.

Serve with chocolate sauce for dipping.
