
Ingredients:
2 avocados – ripe
1- Small red bell pepper
1 garlic clove
1 tsp lime juice
½ cup sour cream
1 tsp salt
1 tsp garlic power
1 tbsp. olive oil
Directions:
Cut red pepper into 4 pieces and deseed.
In a sauté pan, add olive oil. On medium heat, add red pepper and whole clove of garlic. Cook for 5 minutes. Remove from heat, set aside to cool. Peel skin and remove pit on 2 avocados. Cut into smaller slices, place in a mixing bowl. Add salt and lime juice. Stir to coat the avocados. Let avocados rest for 5 minutes. Dice the red pepper into petite cuts and mince the garlic. Return to the avocado mix and mash with a fork until the avocados are smooth (no chunks). Then add garlic powder, minced garlic and diced red pepper. Mix together well. Add the sour cream and mix well. Place in the refrigerator covered with plastic wrap for a few hours before serving.
