Ingredients:
8 thin sliced chicken breasts
½ pound bacon cooked and crumbled
1 cup of plain bread crumbs
½ cup onion finely diced
6 cloves of garlic, cooked
2 cups cheddar cheese, shredded (soft white cheese optional)
1 tsp parsley
2 tbsp. oil
Sauce:
¼ cup yellow mustard
3 tbsp. honey
1 tbsp. sugar
Directions:
Preheat oven to 425*F
In a large pan, brown chicken on both sides with 2 tbsp. of oil. Place browned chicken in a large glass casserole dish. Cook garlic and onion in the remaining oil in the skillet until browned. In a mixing bowl, add onion, garlic, breadcrumbs, grated cheese, crumbled bacon and parsley. Mix well. Place the mixture on top of each piece of chicken evenly to coat. Place the glass casserole dish into the oven and cook for 20 minutes.
While the chicken is in the oven, make the sauce by whisking together until blended.
Top the chicken with the sauce or serve on the side.
