Ingredients:
3 cups cooked chopped chicken
2 tbsp. oil
1 ½ cups of pineapple tidbits drained
½ tsp salt
½ tsp Black Pepper
1 ½ cups sliced almonds
1 cup mayonnaise
Directions:
In a large skillet cook chicken in oil on medium- high heat until well cooked. Do not allow to brown.
Once cooked, set aside to cool. When chicken is cool, dice into ¼ inch cubes.
In a mixing bowl add all ingredients and mix well. Chill for one hour. Make as a sandwich or spread, with favorite crackers or toast points.
