Ingredients:
6 Chicken breasts thinly sliced
1 tbsp. olive oil
1 cup chicken broth
1 tsp garlic powder
½ tsp salt
½ tsp pepper
¼ tsp Oregano
2 cups frozen Spinach thawed
2 Roma tomatoes diced into 1/8” slices
1 package of Havarti or Muenster Cheese (for more spice use pepper Jack cheese)
Directions:
Cook chicken in a large skillet with olive oil and spices until brown on both sides. Add chicken broth to the skillet. Decrease heat to low. Continue to cook Chicken for another 5 minutes per side. Add spinach evenly over each piece of chicken. Cover and let cook for about 5 minutes. Uncover and add sliced tomatoes evenly over the chicken. Then place one piece of choice of sliced cheese on top. Allow cheese to melt. Once cheese has melted and chicken is thoroughly cooked through. Serve
