
Ingredients:
6 Chicken breasts thinly sliced
2 cups sliced mushrooms – diced
1 tbsp. olive oil
½ cup chicken broth
½ cup Red cooking wine
1 tsp garlic powder
½ tsp salt
½ tsp pepper
1 tsp Fresh Rosemary finely chopped
1 package of soft Gouda cheese sliced thin
Directions:
Cook chicken in a large skillet with olive oil and spices until brown on both sides. Add Red wine to the skillet. Decrease heat to low. Continue to cook Chicken for another 5 minutes per side. Add chicken broth and mushrooms . Cover with lid and continue to cook for about 5 minutes. Uncover and place sliced cheese on top. Allow cheese to melt. Once cheese has melted and chicken is thoroughly cooked through. Serve.
Optional: 1- diced Roma tomato. If you choose to add tomato, either place on top of the chicken. Then place the cheese and allow cheese to melt.
