
Step One:
In a large stainless steel bowl, add 1 tsp salt and cold water (enough to cover the chicken). Place chicken in the brine mixture and place in the refrigerator covered for about two hours. Once the chicken is brined, drain water and follow recipe below.

1 whole cut up chicken
1 tbsp. garlic powder
1/2 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
1 tbsp. Paprika
1/2 tsp ginger powder
1/2 tsp onion powder
1/8 tsp baking powder
3 ½ cups of All Purpose flour
1 quart Buttermilk
1 large container of canola oil
Directions:
In one bowl, add flour and all seasonings. In another large bowl, place chicken and cover with buttermilk. Allow the buttermilk and chicken to sit for about 20 minutes. In a large pot, place oil and heat to medium high heat. Once the oil is heated, take the chicken pieces and dredge in flour mixture. Add to the heated oil, and cook each piece until done.
Note: legs and wings will not take as long to cook as the other pieces of chicken. Remove from oil and place on paper towel to drain the excess oil. Serve.
