Chicken with Bacon and Pineapple

Ingredients:
4 boneless chicken breasts sliced thin
Salt and Pepper to taste
4 Pineapple Slices – thin
4 Havarti cheese slices
8 pieces of bacon cooked
Sweet Beach Sauce
Ingredients:
1/3 cup pineapple juice
½ cup ketchup
2 tbsp. Worcestershire sauce
¼ cup brown sugar
Directions for Sauce:
In a bowl, add pineapple juice, ketchup and Worcestershire sauce. Mix well. Then add brown sugar and mix until incorporated.
For thicker sauce add 1 tsp corn starch stir well and let sit in refrigerator until thickened.

Yields: 1½ cups
Marinate chicken or use as a grilling sauce.

Directions for the Chicken:
Salt and Pepper the Chicken to taste.

On the Grill-
Take 1 cup sauce and reserve the other ½ cup for dipping. Brush sauce on one side of chicken. Place chicken with brushed side on the grill for about 7-8 minutes. While the chicken is cooking, place pineapple slices on the opposite side of the grill. Grill the pineapple for 1 minute per side. Remove Pineapple and set aside. Brush the sauce on the chicken before turning and cool another 7-8 minutes. Brush more sauce on the chicken. Place Bacon, Pineapple and then the cheese on top of the chicken. Allow cheese to melt. Remove Chicken and serve.

In the Oven:
Preheat oven to 375*F. Place chicken in a glass casserole dish. Take 1 cup sauce and reserve the other ½ cup for dipping. Brush sauce on one side of chicken. Place the chicken in the oven and cook for 15 minutes. While the chicken is cooking, place pineapple slices on a heated skillet. Cook for about 1-2 minutes per side. Remove and set aside for later. Turn chicken and apply more sauce. Continue to cook for another 15 minutes. Remove from oven and place chicken in a heated skillet with remaining sauce. Allow chicken to sear on one side for about 2-3 minutes. Turn the chicken and apply Bacon, Pineapple and cheese. Allow cheese to melt, careful not to char the chicken. Serve.

I serve this dish with White Rice and Brussel Sprouts.
