Ingredients:
5-6 thin chicken breasts
3 cups Italian Bread Crumbs
Bowl of cold water
1 cup extra virgin olive oil
1 cup shredded parmesan cheese
Spaghetti Sauce
Directions:
Preheat oven to 350* F. In a large sauté pan, heat the one cup of oil to a medium high heat. Place chicken in bowl of cold water. Dredge each piece of chicken into the bread crumbs. Place the chicken into the heated oil and brown on both sides until crisp golden brown color. Place the cooked chicken into an ungreased glass casserole dish. Add enough sauce to cover the chicken. Place in the oven for 15 minutes. Remove and add the parmesan cheese on top. Place back in the oven for another 5 minutes. Serves 4-6
