Ingredients:
1 pound of shrimp peeled and deveined
1 cup grits
4 cups chicken broth
10 ounce can diced tomatoes
1 cup cheddar cheese shredded
1 cup pepper jack cheese shredded
3 tbsp. unsalted butter
½ cup diced green bell pepper
¼ cup finely diced onion
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
Directions:
Preheat oven to 350* F. Cook shrimp in a skillet with 1 tbsp. of butter. In a microwave safe bowl add grits and 1 ½ cups chicken broth and 2 tbsp. butter, stir together and cook for 3 minutes in the microwave. The grits will be stiff. Place the grits mixture in a mixing bowl. Add salt to taste and mix. Mix all remaining ingredients well. Add cooked shrimp and fold in with a spoon. In a shallow 8*8 casserole dish place the mixture. Place in the oven and cook for about 30 minutes. Serve
