Corn Bread Dressing has been enjoyed by all in the Shelby family for many generations. Mema made this at Thanksgiving every year. Now it is a family tradition that I make every year.
First make cornbread with the following recipe
Ingredients:
2 cups white corn meal mix
1½ cups buttermilk
2 eggs
2 tbsp. bacon drippings
Directions:
Grease a 9” round cake pan or square cake pan. Preheat oven to 450* F. Mix all ingredients together and place in greased pan. Bake for 25-35 minutes or until golden brown.
Dressing:
Ingredients:
6 cups cornbread
4 ½ cups plain bread crumbs
1 cup melted margarine
1 cup onion
1 cup celery
8 eggs
1 tsp black pepper
1 tsp salt
1 tbsp poultry seasoning
Directions:
Preheat oven to 375* F. In a large mixing bowl, beat eggs. Add all the other ingredients and mix well. Add to a ungreased deep baking dish 9*9. Place in the oven and bake 45 minutes to one hour until the dressing is firm but soft.
