Grits Casserole

Ingredients:
¼ cup grits
1 ½ cups water
½ can cheddar cheese soup
¼ cup milk
2 tbsp milk
½ cup diced green bell pepper
¼ pound unseasoned sausage
3 eggs
½ cup shredded cheddar cheese
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
Directions:
Preheat oven to 350* F. Cook sausage in a skillet with salt and pepper to taste to fine crumbles. In a microwave safe bowl add grits and 1 ½ cups water, stir together and cook for 3 minutes in the microwave. The grits will be stiff. Place the grits mixture in a mixing bowl. Add salt to taste, ¼ cup milk,  ½ can cheddar cheese soup and garlic powder. Mix well. In a shallow 8*8 casserole dish place the grits mixture. Layer the grits with bell pepper and cooked sausage. In a separate bowl, mix eggs and 2 tbsp of milk with salt and pepper to taste. Pour the egg mixture over the top of the casserole and poke holes into the grits to allow the egg mixture to absorb into the casserole. Top with cheese. Place in the oven and cook for about 30 minutes or until egg is done and cheese is melted.
