Ingredients:
Two egg whites scrambled with salt and pepper to taste
6 spinach leaves
3 mushrooms sliced
One regular sized soft flour tortilla
Directions:
Cook egg, spinach and mushrooms. On a soft tortilla shell add egg and vegetables in the middle of the tortilla.
Fold from the bottom to cover the ingredients. Then fold the tortilla from the right side inward towards the ingredients. Then fold the left side inward toward the ingredients. You have one more fold.
To complete, fold the tortilla tightly by rolling away from you. Place in a heated skillet to warm for about one minute with folded side down.
When freezing the wrap(s), place the burrito in plastic wrap and cover. Place the wrapped burrito in a freezer storage bag. These will last for 7 days.
