
Ingredients:
1 cup white corn meal mix
2 cups yellow corn meal mix
1 egg
1 1/2 cups milk
1/3 cup softened butter
1 tbsp. sugar
5 jalapenos – seeded and sliced thin
½ tsp salt
2 tbsp. oil
Directions:
Preheat oven to 350* F. In a large mixing bowl, mix all ingredients except butter and oil. Then cut up butter and mix evenly in the batter. In an 8 “ round cake pan spread the oil evenly around the pan. Some of the oil will remain at the bottom of the pan. This will allow the corn bread mix not to stick. Pour batter in the cake pan and place in the oven. Cook for 30 minutes or until the corn bread is breaking away slightly from the pan. The corn bread will be slightly brown on top.
