Carne Asada Burrito

Burrito

 

Ingredients:
One 8-16 ounce skirt steak
Carne Asada Marinade
8-10 flour tortillas
3/4 of one large red ripe Tomato
One can of cooked black beans
One can of cooked sweet yellow corn
One cup chopped red onion
One 8 ounce package of Monterey Jack cheese Shredded
4 cups Lettuce cut into strips
Directions:
Cook Skirt steak using the recipe for Carne Asada Marinade and directions.
With tomato washed and seeded, dice. Dice red onion. Set aside.
In a pan, spray with cooking spray. Then heat to medium. Add flour tortilla to the pan and cook on each side for about 20-30 seconds. Remove and place on plate.
Place one ounce of steak, 1 tbsp. tomato, 1 tbsp. onion, 1 tbsp. black beans, 1 tbsp. corn, 2 tbsp. cheese and 2 tbsp. of lettuce to the tortilla. Fold in half and serve.
Great with guacamole or sour cream as a dipping sauce.
Prep Time: 10 minutes + 15 minutes for sauce and 1-2 hours to marinade steak.
Cook Time: 10-16 minutes for the steak and 10 minutes for the tortillas
