
Ingredients:
6 eggs boiled
¼ tsp salt
¼ tsp pepper
1 tsp yellow mustard
¼ cup of sweet pickle relish
4 tbsp mayonnaise
Paprika for garnish (or chives and tomatoes)
Directions:
In a medium sauce pot/pan, place eggs gently. Turn heat to medium high. Once water is boiling, reduce heat to medium-high and let the eggs boil gently for 10 minutes. Turn the heat off and allow the eggs to stay in the hot water for another 10 minutes. Place sauce pan under cold water and peel the shell off the eggs. Cut in half lengthwise. Remove the yolk and place in a bowl. In the yolk bowl, mash all yolks with a fork until smooth. Add salt, pepper, mustard and stir well. Next add mayonnaise and mix well. Then add pickle relish and stir in gently. Add one tbsp. of yolk mixture to each sliced egg. Sprinkle with Paprika if desired as a garnish. Cover with plastic wrap. Place in refrigerator immediately until ready to serve.
Note: I like to dress my eggs differently. In this picture I have sliced cherry tomatoes and green onions for a beautiful and tasty garnish.
