Zucchini Sticks

 

 

Ingredients:
3 fresh zucchinis
4 cups Italian bread crumbs
2 cup All Purpose Flour
4 cups chicken broth
2 large eggs
¼ tsp salt
Canola oil
Directions:
Wash zucchini and cut into ½ “ length and ½” wide strips. Heat oil to high heat (375-400*F).

Step One:

In a mixing bowl, mix chicken broth and eggs. Whisk this mixture together. In a second bowl, mix flour with salt. In a third bowl, add bread crumbs.

Step Two:

Dredge each zucchini in broth and then flour mixture. Set aside on a pan for 5 minutes. Then dredge the zucchini in chicken broth and then the bread crumbs. Set aside for 5 more minutes.

Step Three:

When oil is hot, (375 – 400 Degrees) add breaded zucchini sticks and fry until golden brown, (about 3 minutes). Remove and place on paper towels to drain of excess oil.

Serve with Creamy Parmesan Garlic Dressing

Serve.
