Stuffed Mushrooms

 

Ingredients:
12 Baby Bella Mushrooms
2 bacon slices
2 cups fresh spinach
1 clove garlic
¼ tsp salt
½ cup shredded smoked Gouda cheese
¼ cup Italian bread Crumbs
1 tbsp. Extra Virgin Olive oil

Directions:
Step One:
Prepare all ingredients. Wash Spinach and remove stems from the leaves. Finely chop the spinach and reserve. Wash and remove stems from mushroom to leave only caps. Set aside. Finely dice the garlic clove. Shred Smoked Gouda cheese and set aside. Cut Bacon into thin pieces.
Step Two:
In a large sauté pan, add oil and turn heat to medium. When oil is at medium heat, add bacon and cook for about two minutes. Then add clove of garlic. Continue to cook until bacon is crispy. Then add spinach and stir in the pan for about 60 seconds. Remove from heat. Spinach will be brighter in color and cooked down.
Step Three:
Add the salt and cheese immediately. Let cheese melt slightly. Add Bread Crumbs and mix thoroughly.
Step Four:
Preheat Oven to 400*F. Drizzle 2 tsp. of olive oil to coat the bottom of a roasting pan. Place Mushrooms with cavity facing up. Fill the mushrooms with 1 tsp of the mixture.

Place on the top rack in the oven and cook for 10 minutes.
Remove and Enjoy!
